Les Ambassadeurs is the gastronomic restaurant of the Hôtel Métropole, a Belle Époque house of 1886 entirely redone by Jacques Garcia, whose bronze, ivory and gold palette dresses the room. Christophe Cussac, once a protégé of Joël Robuchon, moves between French classicism and lighter modern plates with the Mediterranean as the thread – Michelin names a lobster lasagne with tarragon and spinach, and John Dory with artichoke in a coriander broth. Two stars in the 2026 guide, and its dining-room director Marco Tognon received Michelin's 2026 Service Award; the bread and dessert trolleys are part of the ritual.
