L'Abysse is Yannick Alléno's sushi restaurant inside the Hôtel Hermitage, a concept proven elsewhere before Monaco. The room and the light-wood counter are almost all white, lifted by shell-pink upholstery, and the counter is the seat to take: a master sushi chef shapes each piece to order, and Alléno's touch shows in the sauces and jus. Two Michelin stars in 2026, €€€€, with a notable sake list.
