Gustave is the Hôtel Hermitage's lounge bar, facing the main entrance and spreading from the Rotunda under the Winter Garden's glass roof into the lobby, the arcades and the terrace. Shirine Zirak designed it as an eighteenth-century salon with a contemporary edge; by night it serves rare spirits and cocktails mixed at the table, and executive chef Laurent Piolti's gin-cured gravlax and truffle croque-monsieur. Open daily, noon to 1 am.
