The Café de Paris has faced the Casino since 1868. Its latest renovation, the first Monaco project of the London studio David Collins, kept the restrained Art Deco its regulars love and added wrought iron, mosaics and stained glass. Chef Victor Marion serves updated brasserie classics from morning to night, seven days a week: egg mayonnaise with caviar, pâté en croûte, sole meunière, and the crêpe Suzette – invented here, Michelin notes – flambéed at the table.
