Les Perles de Monte-Carlo, on the Quai Jean-Charles-Rey, began in 2011 when two marine biologists started refining shellfish in the Fontvieille waters; today it serves its oysters with clams, prawns, sea bream, sea bass, lobster and crayfish, to eat on the quay or take away.
